Title: Red Velvet Cake & Frosting

1 1/2cSugar
2 Eggs
2 1/2cCake flour
1 1/2cVegetable oil
1cButtermilk
1tsVanilla
1tsBaking soda
1tsVinegar
5/8ozRed food coloring FROSTING:
1lbPowdered sugar
8ozCream cheese
1/2lbButter
1tsVanilla
1cChopped pecans

Cream eggs, sugar, oil & vinegar. Sift cake flour & soda together. Add flour while beating. Add milk slowly. While still beating, add vanilla & food coloring. Bake in 3 layers at 350 degrees for 25 minutes. Press lightly to check if layers are spongy & done.

FROSTING: Melt cream cheese & butter on very low heat. Add sugar, pecans & vanilla. Mix well & spread over cooled layers, top & sides. If mixture becomes too thick, add a little milk.
